Ingredients

Serves 10

  • 4 cups Pictsweet frozen Sliced Yellow Squash
  • 1 egg, beaten
  • 1/2 cup buttermilk
  • 1/2 cup Pictsweet frozen Chopped Onions
  • 1 cup self rising flour
  • salt and pepper to taste

Directions

Place frozen squash and onion in a saucepan and cover with water. Place on stovetop and bring to a boil. Boil 3 minutes or until tender. Drain and mash and drain again. Combine squash, egg, buttermilk, onion, flour and salt and pepper to taste. Heat vegetable oil in deep fryer to 360 degrees. Immerse fryer basket in oil and drop squash mixture by scant tablespoon into heated oil. Cook until golden brown. Drain and serve hot. Makes 40 to 50 "squash puppies"
