Serves 6

  • 4 cups Pictsweet frozen Sliced Carrots
  • 3/4 cup Pictsweet frozen Chopped Onions
  • 4 cups chicken broth
  • 2 teaspoons tomato paste
  • 2 tablespoons butter
  • 2 tablespoons uncooked brown rice
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon salt
  • 1/8 teaspoon white pepper


Place all ingredients in a large saucepan and bring to a boil. Reduce heat and simmer about 15 minutes or until carrots are tender and rice is soft. Cool slightly. Puree in small batches in a food processor. To serve hot, return to pan and heat through. Serve warm bowls and garnish with chopped parsley or a dash of paprika. This can also be served cold.
