Vegetable Chowder with Cheddar

For vegetarians, substitute vegetable broth for the chicken broth.

Serves 8

  • 4 cups chicken broth
  • 4 medium peeled and diced potatoes
  • 1 cup Pictsweet Seasoning Blend
  • 1 cup Pictsweet Sliced Carrots
  • 1/2 cup Pictsweet Chopped Green Peppers
  • 1/2 cup butter
  • 1/3 cup all purpose flour
  • 3 1/2 cups milk
  • 4 cups grated mild cheddar cheese
  • Hot sauce to taste


Put broth in a pot and bring to a boil. Add diced potato, carrots, seasoning blend and bell pepper. Cover and simmer 12 minutes or until tender. Melt butter in a heavy saucepan over low heat. Add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring until thickened and bubbly. Add cheese, stirring until melted. Add cheese mixture to vegetable mixture. Cook over low heat until thoroughly heated. Add hot sauce to taste.
