Serves 10

  • 3 cups Pictsweet frozen Broccoli Florets
  • 3 cups Pictsweet frozen Sliced Yellow Squash
  • 1/4 cup butter or low-fat margarine
  • 2 eggs
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dry mustard
  • 1 cup Swiss cheese
  • 1/2 cup parmesan cheese


Place frozen squash and broccoli in a saucepan and cover with water. Place on stove top and bring to a boil. Boil for 3 minutes. Drain. Add butter. In a large mixing bowl, beat eggs; stir in milk, salt, pepper, mustard, and Swiss cheese. Place vegetables in a 2-quart casserole dish. Pour egg mixture over vegetables and sprinkle with grated parmesan cheese on top. Bake at 375 degrees for 25 to 30 minutes or until cheese is lightly browned and custard is firm.
