Serves 12

  • 2 tablespoons butter
  • 1 cup Pictsweet Chopped Onions
  • 3 (10 3/4 oz.) cans condensed cream of potato soup
  • 3 1/2 cups milk
  • 2 tablespoons seafood seasoning
  • 2 pounds peeled medium fresh shrimp
  • 4 cups Pictsweet Super Sweet Yellow and White Corn
  • 1 1/2 cups shredded Monterey Jack cheese
  • Chopped fresh parsley or chives for garnish


In a large pot, melt butter over medium heat. Add onion and sauté until tender. Stir in potato soup, milk and seasoning. Bring to a boil. Add shrimp and corn. Reduce heat and simmer for about 5 minutes or until shrimp turns pink. Stir in cheese until melted. Garnish and serve immediately.
