Ingredients

Serves 10

  • 5 cups Pictsweet frozen Baby Lima Beans
  • 1 (10 3/4 oz.) can condensed cheese soup
  • 1/2 cup milk
  • 1/2 cup mayonnaise or salad dressing
  • 3/4 cup chopped celery
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped pimento
  • 1 (6 oz.) can fried onion rings, divided

Directions

Place frozen lima beans in saucepan and cover with water. Place uncovered saucepan on stove top and bring to a boil. Boil for 3 minutes. Reduce heat, cover and simmer 20 minutes. Drain. Blend together cheese soup, milk and mayonnaise. Add lima beans, celery, parsley, pimento and 1/2 can of the onion rings, chopped. Pour into casserole. Bake covered at 350 degrees for 20 minutes. Uncover and top with the remaining onion rings. Continue to bake for 10 minutes.
