Ingredients

Serves 8

  • 4 cups Pictsweet frozen Blackeye Peas
  • 1/2 cup Pictsweet frozen Chopped Onions
  • 2 cups uncooked long grain rice
  • 1 teaspoon butter
  • 1 teaspoon salt
  • 4 1/2 cups water
  • 1 teaspoon paprika
  • 1 1/2 teaspoons Cajun seasoning
  • 1 1/2 teaspoons minced garlic

Directions

Place frozen peas and onions in a saucepan and cover with water. Place on stove top and bring to a boil. Boil for 4 minutes. Reduce heat, cover, and simmer for 40 minutes. Drain. In a saucepan, combine remaining ingredients. Bring to a boil. Reduce heat, cover, and simmer for 15 minutes. Mix well and serve.
