This creamy, cold soup makes a delightful dish for a hot summer night. It can also be heated to enjoy in the winter months.

Serves 8

  • 4 cups Pictsweet Chopped Broccoli
  • 4 cups chicken broth
  • 2 tablespoons butter
  • 1/2 cup Pictsweet Chopped Onions
  • 1 teaspoon salt
  • Pepper to taste
  • 1 tablespoon lime juice
  • 1/4 cup sour cream
  • 1/4 cup heavy cream
  • Lemon slices, sour cream and chives for garnish


Simmer broccoli, broth, butter, onions and seasonings for 8 to 10 minutes. Puree broccoli mixture and refrigerate for 4 hours or more. Add sour cream, heavy cream and lime juice. Serve cold and garnish each serving with a lemon slice, spoonful of sour cream and a sprig of chives.
