Serves 8

  • 4 cups Pictsweet frozen Baby Lima Beans
  • 1 cup Pictsweet frozen Chopped Onions
  • 1 cup Pictsweet frozen Chopped Green Peppers
  • 2 tablespoons vegetable oil
  • 1 tablespoon cornstarch
  • 1 tablespoon chili powder
  • 1 cup sliced black olives
  • 1 cup grated cheddar cheese, divided


Cook lima beans according to package directions and reserve 1 1/4 cups of liquid. Saute onions and green peppers in vegetable oil until tender. Blend in cornstarch, chili powder, olives, lima beans, reserved liquid and 1/2 cup cheese. Mix well and pour into a 1 1/2 quart casserole. Top with remaining cheese and bake for 30 minutes at 350 degrees.
