Tomato and Corn Sauté
This is a savory delight that will look great on the appetizer table.
Ingredients
Serves 6
- 2 tablespoons butter
- 3 cups Pictsweet frozen Cut Corn
- 1 1/2 cups Pictsweet frozen Seasoning Blend
- Salt and pepper to taste
- 1 to 2 sliced tomatoes
- 1/3 cup sour cream
- 1/4 cup small curd cottage cheese
- 1 teaspoon dried basil
- 1/2 teaspoon dill weed
Directions
In a large skillet, melt butter. Add frozen corn, frozen seasoning blend, salt and pepper. Cook over medium heat 4 to 5 minutes. Mound mixture in center of skillet. Arrange tomato slices around edge of skillet. In a small bowl combine remaining ingredients. Mix well. Spread 1 tablespoon of cottage cheese mixture over each tomato slice. Cook covered over low heat until tomato slices are warm. Serve each portion of corn mixture topped with tomato slices.
