Southwest Cornbread Casserole

This dish is great for a quick weeknight supper.


Serves 8

  • 3 cups Pictsweet frozen Mixed Vegetables
  • 1 (10 oz.) package cornbread stuffing mix
  • 1 1/2 cup cubed ham
  • 2 cups milk
  • 3 slightly beaten eggs
  • Salt and pepper to taste
  • 1/2 cup grated cheddar cheese


Thaw the mixed vegetables. Combine vegetables, stuffing mix and ham in greased, 1-quart casserole dish. Set aside. Combine milk, eggs, salt and pepper in a medium bowl and pour over ham mixture. Bake covered for 30 to 40 minutes in a 375-degree oven. Top with cheese and bake uncovered for 3 minutes or until cheese is melted.
