Southern Country Club Squash
Cooked bacon crumbles add texture and flavor to this casserole.
Ingredients
Serves 8
- 4 cups Pictsweet Sliced Yellow Squash
- 1/2 cup Pictsweet Chopped Onions
- 1 cup sour cream
- 1/2 teaspoon salt
- 1/4 teaspoon dried basil
- 1 cup bread crumbs
- 1/2 cup grated cheddar cheese
- 1/3 cup melted butter
- 1/2 teaspoon paprika
- 6 slices crumbled, cooked bacon (topping)
Directions
Place frozen squash and chopped onion in a saucepan and cover with water. Place on stove top and bring to a boil. Boil 3 minutes. Drain and mash. Combine squash, sour cream, salt, pepper and basil. Pour into a greased, 2-quart casserole dish. Combine bread crumbs, cheese, butter and paprika. Sprinkle over squash. Top with crumbled bacon. Bake for 30 minutes at 300 degrees.
