Shoepeg Salad

A great cold salad for a special occasion.


Serves 6

  • 3/4 cup white vinegar
  • 1 tablespoon water
  • 1/4 cup virgin olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 cup sugar
  • 2 cups Pictsweet frozen White Shoepeg Corn
  • 2 cups Pictsweet frozen Green Peas
  • 1/4 cup chopped pimentos
  • 1 cup green pepper
  • 1 cup chopped green onions


To make dressing: bring vinegar, water, olive oil, salt, pepper and sugar to a boil. Reduce heat and simmer for 2 minutes. Remove from heat and let mixture cool. Place frozen shoepeg corn and green peas in a saucepan and cover with water. Place on stove top and bring to a boil. Boil for 3 minutes. Drain. Mix corn, green peas, pimentos, pepper and onions with dressing. Refrigerate overnight.
