Quick and Savory Vegetable Soup
For a tastier soup, rub the inside of the pot with a clove of garlic.
- 3 cups Pictsweet Mixed Vegetables
- 1 (14.5 oz.) can drained and quartered sliced new potatoes
- 1 (14.5 oz.) can undrained diced tomatoes
- 1 cup chicken broth
- 1 cup water
- Salt and pepper to taste
Combine all ingredients in a Dutch oven over high heat. Bring to a boil. Boil 3 minutes. Cover, reduce heat and simmer for 20 minutes. Serve immediately or refrigerate.
