Curry Creamed Cauliflower and Peas

Curry is a spice used in many Indian dishes. It has a very distinct and delightful flavor.


Serves 6

  • 4 cups Pictsweet Cauliflower Florets
  • 2 cups Pictsweet Green Peas
  • 2 tablespoons olive oil
  • 2 tablespoons flour
  • 2 teaspoons curry
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground cardamom
  • 1 cup milk
  • 1 tablespoon chopped parsley
  • Pinch of salt
  • Pinch of paprika


Put frozen cauliflower and peas in a saucepan and cover with water. Place on stove top and bring to a boil. Boil 3 minutes. Drain. Heat oil in a large saucepan. Reduce heat and blend in flour, curry, turmeric and cardamom to make a roux. Use a whisk to blend in milk. Stir and simmer until sauce is smooth and thick. Add vegetables to sauce and heat together. Place in serving bowl and sprinkle with parsley, salt, and paprika.
