Corn Fritters with Sweet Basil

This is tasty with powdered sugar or maple syrup.

Ingredients

Serves 4

  • 2 cups Pictsweet White Shoepeg Corn, thawed
  • 1 large beaten egg
  • 3/4 teaspoon salt
  • 1/4 teaspoon sugar
  • Dash freshly ground pepper
  • 3 tablespoons flour
  • 1 teaspoon fresh, finely chopped sweet basil
  • 2 tablespoons canola or vegetable oil

Directions

Puree corn, egg, salt, sugar, pepper, flour, and basil in food processor. Mixture should be thick and slightly chunky. Heat the oil in a heavy skillet. Drop the corn mixture by tablespoons into hot oil. Fry on each side until golden brown. Serve with powdered sugar or maple syrup.
