Chilled Green Pea Soup

Ingredients
Serves 12
- 5 cups Pictsweet frozen Green Peas
- 3/4 cup Pictsweet frozen Chopped Onions
- 2 cups chicken broth
- Pinch of sugar
- Salt and pepper to taste
- 4 tablespoons butter
- 4 tablespoons flour
- 2 cups milk
- 1 cup whipping cream, divided
- 1 can (10 3/4 oz.) cream of tomato soup
Directions
Put peas, onion, chicken broth, sugar, salt and pepper in a saucepan. Place on stovetop and bring to a boil. Boil for 3 minutes. Cool and puree in a blender or food processor. Melt butter in a saucepan. Add flour, stirring until smooth. Cook, stirring constantly, for 1 minute. Add milk gradually, cooking and stirring constantly until mixture begins to thicken. Add puree, thin with 3/4 cup whipping cream, and chill at least 2 hours. To serve, add to each bowl 1 tablespoon tomato soup, thinned with enough cream to match the consistency of the pea soup. Swirl tomato soup and cream around. Sprinkle each serving with paprika.
